Lemon Poppy Seed Bread

My nephew, Beau's, favorite treat is lemon poppy seed bread. So, years ago, I made up this recipe especially for him. No doubt you could make it with dry poppy seeds, if you cannot find the cans of Solo Poppy See Pie Filling at your local grocers. If that is indeed what you end up doing, add 1/4 cup oil to your recipe.

Lemon Poppy Seed Bread

1 package Lemon Cake Mix

6 0unce Instant Lemon Pudding

3 eggs

1 cup Sour Cream

1/2 can of Solo Poppy Seed Pie Filling

1 cup of water

Mix all the ingredients together well and pour into two well-greased bread pans. Bake at 350 for 45-55 minutes, making sure they are completely done in the middle. Yumm!
